This is the lebanese version of coleslaw salad!
-400g of cabbage, very finely shredded-1 diced tomato (optional)
-Juice of 2 lemons
-1 small garlic clove crushed with salt
-extra virgin olive oil to taste
-2 teaspoons of dried mint
-Sea salt to taste
Whisk together the lemon juice, garlic paste and dried mint. If you’re putting tomatoes, add now, mix and let them soak in the dressing for 2 minutes. Add the cabbage and toss lightly. Add olive oil and toss again. Adjust the salt and serve.
