Kafta w batata
For the kafta meat loaf:
- 2 lb. of ground beef or lamb (or half & half)
- 2 tsp. of salt
- 1/2 tsp of pepper
- 1 cup of finely chopped onions (or grated)
- 1/2 cup of chopped parsley
Rest of the ingredients:
- about 10 to 12 medium potatoes
- 4 medium tomatoes
- 2 medium onions
- 1 cup of tomato juice
- 1 cup of water
- vegetable oil for frying (optional)
- salt and pepper to taste
Mix thoroughly the meat with the other ingredients. Butter a baking pan. Spread with your hands the meat mixture on the pan. Bake in a moderate oven until meat is partially done.
Slice the tomatoes and the onions.
Cover the cooked meat with a layer of sliced potatoes, topped with a layer of sliced tomatoes. Undo the onion in rings and sprinkle them on top. Combine the tomato juice and the water and add salt and pepper to taste. Pour over the vegetables and meat. Bake in a moderate oven until the meat is well cooked and the sauce has thickened like a light gravy.
Serve with vermicelli rice.
